The tradition of growing coffee using organic practices has been going on for hundreds of years. These pratctices include; interplanting coffee with shade trees, composting, and eliminating harmful chemicals. According to experts, "sustainable" coffee plantations often yield some of the best tasting varieties. Unfortunately, farmers can produce greater quantities of beans more cheaply in open fields with full sun. The deforestation of the tropical forests of Central America and Mexico and the abandonment of traditional coffee plantations have given way to conventional agriculture. This loss of forest habitat is directly linked to shrinking migratory song bird populations. Insects and natural predators can no longer be kept in check, so farmers turn to powerful pesticides that are harmful to people and wildlife. But fortunately, you do have a choice! Buy organic!

What is "Organic Coffee"? Organic coffee is grown using methods that have a low impact on the environment. Organic systems of production maintain and replenish soil fertility, reduce use of toxic pesticides and fertilizers that persist in the soil, and foster the growth of biologically diverse agriculture. Third-party certification is used to verify that organic farmers use only methods and materials allowed in organic production.

"What does it mean to be “Certified Organic”? In order for coffee to be certified and sold as organic in the United States, it must be produced in accordance with U.S. standards for organic production and certified by an agency accredited by the

Coffee that is organically grown is a sustainable, long-term crop that is grown using traditional methods. Traditionally coffee grows at high altitudes under the tree canopy. The trees provide shade which the coffee plant thrives in. There is very little need for chemical treatment given the diversity of plant and animal life. The shade and abundant vegetation produces a natural compost that keeps the soil rich in nutrients. The canopy above provides habitat for hundreds of species of native song birds. Diverse animal and insect life offers protection for the coffee plant against the bugs and pests that prey on it. A larger, denser coffee bean, superior in flavor to that of its sun grown counterpart is created under these conditions. One of the results is a better working environment for the workers and fair trade improves workers health and living conditions.
